How It's Made
Our home apiary is located in the foothills of the Smoky Mountains outside of Maryville, Tennessee.
The Spring nectar flow consists mostly of tulip poplar and wild blackberry blooms creating honey that has a light and floral flavor with a darker color.
The main nectar flow comes from sourwood trees that bloom through the mid-summer and gives our honey its unique nut and sweet caramel notes.
Honey harvest is usually started after the Fourth of July depending on weather.
Honey supers are cleared of bees using special one-way doors before being removed from the hive. Plenty of honey is left to feed the hive through winter.
The combs are uncapped with a special scraper or hot knife before being placed into a centrifuge extractor that spins out the honey and saves the combs to give back to the bees next year.
The honey is poured through a course filter to remove wax debris before it is bottled. This leaves the honey clean and clear while preserving its natural enzymes and proteins.
